Hello from Chado Yojo Onsen: Seasonal Bounty of Shiitake Mushrooms

The days are getting shorter and the vibrant green leaves are starting to show hints of gold and
crimson. Finally Autumn has arrived and brought its seasonal delicacy, plentiful wild mushrooms
like shiitake, maitake and matsutake, just mention a few.

Shiitake mushrooms have cultivated for over a thousand years in Japan and China.
The ancient horticultural document described it was prized for its flavor and medicinal properties.
Japan boasts the premium taste of shiitake mushrooms due to the traditional cultivation in which
they are grown on hardwood logs in shady and damp environments of the wood.
The logs are returned to the wood as nutrient-rich soil after four years.

The shiitake contains large amounts of antioxidants and trace minerals
such as selenium. Selenium has been associated with lowered risk of
some types of cancer which may be due to its antioxidant activity,
helping reduce oxidative stress, boost immunity and fight cancer cells.
Additionally, the unique compound known as lentinan is found in shiitake
mushrooms, contributing to immunity support.

When undergoing a health checkup in Japan, the typical questionnaire:
how often do you eat mushrooms ?
When three times and more a week, you might have a lesser chance of
getting diagnosed with any cancer.

Shiitake mushrooms are valued for their rich, savory umami flavor,
having earthy taste and slightly sweet. The flavor and aroma are
intensified when cooked and adding depth and complexity to dishes.
