Ferry, come and go?

I am going to seakayak and I would like go to Norway but not in bad weather. In that case I would end in Sweden or Denmark.
So I cannot buy ferry now. Is it possible to arrive to Hirtshal, buy a ticket and go? What are the odds there will be free space in 2.9?

I am not sure if anyone can predict whether the ferry will be full or not. Why not book a ticket and cancel/modify it if you need to? It seems like they are open to ticket changes on their website.
